Stuffed Potato Pancakes
Ingredients
3 large potatoes (boiled and mashed).
3.5 oz (100g) Parmesan cheese (grated, added to the mix).
1 egg (to bind the mixture).
3 tbsp Flour or Cornstarch (for a crispy texture).
Mozzarella cheese (for the gooey center shown in the photo).
Fresh parsley (finely chopped).
Seasoning: Salt, black pepper, and paprika (as seen in the mixing bowl).
Preparation Steps
Prepare the Base: In a large bowl, mash the boiled potatoes while they are still warm.
Mix & Season: Add the egg, grated Parmesan, flour, chopped parsley, and spices (salt, pepper, and paprika). Mix thoroughly until you have a smooth, pliable potato dough.
Stuff & Shape: Take a small portion of the potato dough, roll it into a ball, and flatten it slightly. Place a piece of mozzarella cheese in the center, wrap the dough around it, and press it into a disk shape.
Fry: Heat a little oil or butter in a non-stick frying pan over medium heat.
Cook to Gold: Place the potato cakes in the pan and cook for about 3–4 minutes per side until they are golden brown and crispy. This ensures the cheese inside is perfectly melted.
Pro Tip: If the potato dough is too sticky to handle, lightly grease your hands with oil before shaping the patties.
