Low-Carb Spinach Casserole 🥬🧀
INGREDIENTS
1 tbsp olive oil
½ onion, finely chopped
3 garlic cloves, minced
2 lbs fresh spinach or 32 oz frozen chopped spinach (thawed and squeezed dry)
8 oz cream cheese, cubed and room temperature
1 cup sour cream
1 cup heavy cream
1½ cups shredded Gruyère cheese
1 tsp sea salt
¼ tsp freshly ground black pepper
1 egg, beaten
½ cup grated Parmesan cheese (for topping)
½ cup crumbled bacon (for topping)
INSTRUCTIONS
Preheat oven to 350°F. Spray a 9×9-inch baking dish with cooking spray.
Heat olive oil in a large skillet over medium-high heat. Add onion and cook for about 6 minutes, until softened. Add garlic and cook 1 minute more.
Stir in the spinach and cream cheese. Reduce heat to low and cook until the cream cheese is fully melted and incorporated.
Remove from heat and stir in sour cream, heavy cream, Gruyère, salt, and pepper.
To prevent scrambling, add a small amount of the hot mixture to the beaten egg to temper it, then quickly stir the egg into the skillet mixture.
Transfer to the prepared baking dish. Top evenly with bacon crumbles and Parmesan cheese.
Bake for 35 minutes, or until golden and bubbly.
