ROASTED CARROTS WITH WHIPPED RICOTTA

Ingredients:

 

For the Roasted Carrots:

1 lb carrots (whole baby carrots or large carrots halved lengthwise)

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

 

For the Whipped Ricotta:

1 cup ricotta cheese

1 tablespoon lemon juice

1 small garlic clove, minced

¼ teaspoon salt

 

For the Hot Honey Drizzle:

¼ cup honey

½ teaspoon red pepper flakes

 

Instructions:

 

1️⃣ Roast the Carrots: Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and caramelized.

 

2️⃣ Prepare the Whipped Ricotta: In a food processor or using a whisk, blend ricotta, lemon juice, garlic, and salt until smooth and creamy.

 

3️⃣ Make the Hot Honey: In a small saucepan over low heat, warm honey with red pepper flakes for 1-2 minutes. Remove from heat and let infuse.

 

4️⃣ Assemble the Dish: Spread the whipped ricotta on a serving plate, top with roasted carrots, and drizzle with hot honey.

 

5️⃣ Serve & Enjoy: Garnish with fresh herbs like thyme or parsley for an extra pop of flavor!
