Coconut Cake

 

Ingredient:

 

– **2.5 cups all-purpose flour**

– **1 teaspoon baking soda**

– **1 teaspoon baking powder**

– Other common ingredients typically include sugar, eggs, coconut milk, butter, vanilla extract, and shredded coconut for the cake. For the frosting: sugar, egg whites, cream of tartar, and vanilla extract.

 

Preparation Method

 

1. **Prepare the Cake Batter:**

– Preheat the oven to 350°F (175°C).

– In a bowl, mix the flour, baking soda, and baking powder.

– In a separate bowl, cream together the butter and sugar until fluffy.

– Add eggs, one at a time, mixing well after each addition.

– Alternate adding the dry ingredients and coconut milk, starting and ending with the dry ingredients.

– Fold in shredded coconut.

 

2. **Bake the Cake:**

– Pour the batter into prepared cake pans.

– Bake for 25-30 minutes or until a toothpick comes out clean.

 

3. **Prepare the Seven-Minute Frosting:**

– In a saucepan, combine sugar, water, and egg whites.

– Beat over low heat until the mixture is warm.

– Increase the heat and continue beating until it forms stiff peaks (about 7 minutes).

– Remove from heat, add vanilla, and mix well.

 

4. **Assemble the Cake:**

– Once the cake has cooled, frost between the layers and on top with the seven-minute frosting.

– Garnish with additional shredded coconut.
