Cheesy Shredded Beef Quesadillas

 

Ingredients:

 

2 cups shredded cooked beef (slow-cooked or leftover roast)

 

8 small flour or corn tortillas

 

2 cups shredded mozzarella or Monterey Jack cheese

 

1/2 cup cheddar cheese, shredded

 

1 tbsp olive oil or butter

 

1/2 tsp garlic powder

 

1/2 tsp paprika

 

Salt and black pepper to taste

 

Optional: chopped onions or jalapeños

 

Instructions:

 

Heat a skillet or flat griddle over medium heat and lightly grease it with olive oil or butter.

 

Place a tortilla on the skillet and sprinkle a layer of mozzarella and cheddar cheese over half of it. Add a generous portion of shredded beef on top of the cheese and season lightly with garlic powder, paprika, salt, and black pepper.

 

Add a little more cheese on top of the beef to help everything stick together. Fold the tortilla over to form a half-moon shape.

 

Cook for about 2–3 minutes on each side until the tortilla is golden and crispy and the cheese inside is melted.

 

Remove from the skillet and cut into halves or triangles. Serve hot with salsa, sour cream, or guacamole. 🌮🧀
