Cheesy Baked Chicken Thighs
Ingredients
2½–3 lb boneless skinless chicken thighs
2 tbsp olive oil or melted butter
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt & black pepper to taste
1 cup heavy cream
1½–2 cups shredded mozzarella or Italian blend
¼ cup grated parmesan
Optional: chopped parsley for serving
Instructions
Preheat oven
Heat oven to 400°F (205°C).
Season the chicken
Place chicken thighs in a baking dish. Drizzle with olive oil or butter. Season with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
Add cream
Pour heavy cream evenly around (not over) the chicken so it stays juicy but can still brown.
Top with cheese
Sprinkle mozzarella evenly over the chicken, then finish with parmesan.
Bake
Bake uncovered for 35–40 minutes, until chicken is cooked through and cheese is melted and golden.
Rest & serve
Let sit 5 minutes before serving. Spoon some of the pan sauce over the chicken.
