Baked Apple Cinnamon Cottage Cheese Breakfast Bowls

 

Ingredient:

 

Yields: about 2 servings (2 small bowls)

 

Ingredients:

– 1 cup (≈240 g) cottage cheese

– 2 large eggs

– 1/2 cup (≈50–60 g) almond flour (or rolled oats, ground, for a heartier texture)

– 1 tsp ground cinnamon

– 1 tsp vanilla extract

– 2–3 tbsp honey or maple syrup (optional — for added sweetness; reduce or substitute with a low‑calorie sweetener like stevia or erythritol for fewer carbs)

– 1/2 tsp baking powder

– Pinch of salt

– 1 medium apple, peeled and finely chopped

– 1–2 tsp butter or a little coconut oil for sautéing the apple (optional)

– Extra cinnamon for sprinkling (optional)

 

Instructions:

1. Preheat the oven to 350°F (180°C). Grease two small ramekins or spray them lightly with cooking spray.

 

2. Prepare the apple (optional, but adds a nice caramelized flavor):

– In a small skillet over medium heat, melt 1–2 tsp butter (or coconut oil). Add the diced apple, a small pinch of cinnamon, and 1 tsp honey (if using). Sauté 3–5 minutes until the apple softens and begins to brown slightly. Remove from heat and let cool a little.

 

3. Make the cottage cheese batter:

– In a large bowl, mix the cottage cheese with the eggs until evenly combined. Use a fork or quick whisk to break up the curds for a smoother texture if desired.

– Stir in the almond flour (or ground oats), cinnamon, vanilla extract, honey or syrup (if using), baking powder, and a pinch of salt. Mix until combined.

 

4. Assemble the bowls:

– Divide the cottage cheese mixture evenly between the two ramekins.

– Spoon the sautéed apple over the top, or fold some into the batter and reserve some for the surface.

 

5. Bake:

– Bake in the preheated oven for about 20–25 minutes, or until the tops are set and starting to brown. Baking time will vary with the size/depth of your ramekins — begin checking around 18 minutes.

– For a more browned top, you can broil for 1–2 minutes at the end, watching very closely to avoid burning.

 

6. Serve:

– Remove from the oven and let rest 2–3 minutes. Sprinkle extra cinnamon on top and drizzle a little honey if desired. Serve warm.

– Optional toppings: chopped nuts (walnuts, almonds), Greek yogurt, or a light caramel drizzle.
