Amish Oatmeal Pie

 

Ingredient:

– 1 store‑bought pie crust (or homemade crust: 250 g all‑purpose flour, 115 g cold butter, a pinch of salt, 3–4 tbsp cold water)

 

Sweet oatmeal filling:

– 1 cup (100 g) oats (old‑fashioned or quick oats)

– 1 cup (200 g) packed brown sugar (you can use a mix of light and dark brown sugar)

– 1/2 cup (100 g) granulated sugar (optional — some recipes use only brown sugar)

– 3/4 cup (170 g) melted butter

– 3 large eggs, lightly beaten

– 1 tsp vanilla extract

– 1/4 tsp salt

– 1/2 cup (120 ml) milk or light cream (optional, for a smoother texture)

– 1 cup (120 g) all‑purpose flour (used to bind the filling)

– 1 cup (120–150 g) chopped nuts (walnuts or pecans) — optional

– 1 cup (240 g) light corn syrup (or honey/maple syrup as a substitute) — used in some versions to adjust sweetness and consistency

 

Simplified alternative ingredient list:

– 1 pie shell (9‑inch)

– 1 cup light brown sugar, packed

– 1/2 cup all‑purpose flour

– 1 cup oats

– 1/2 cup melted butter (115 g)

– 3 eggs

– 1 tsp vanilla

– 1/2 cup chopped nuts (optional)

– 1/2 cup corn syrup or honey (optional — makes the filling more syrupy and glossy)
