Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf

Ingredients:

For the Meatloaf:

 

1 lb ground chicken

2 cloves garlic, minced

1 teaspoon dried oregano

¼ cup fresh parsley, chopped

1 egg, beaten

½ cup marinara sauce (plus extra for topping)

¼ teaspoon black pepper

½ teaspoon salt

1 tablespoon olive oil

¼ cup breadcrumbs

½ cup Parmesan cheese, grated

Directions:

 

1️⃣ Preheat the Oven:

 

Preheat your oven to 375°F (190°C).

Lightly grease a 9×5-inch loaf pan or line it with parchment paper.

2️⃣ Prepare the Meatloaf Mixture:

 

In a large mixing bowl, combine ground chicken, garlic, oregano, parsley, egg, salt, black pepper, olive oil, breadcrumbs, and Parmesan cheese.

Add ½ cup marinara sauce and mix until fully incorporated.

3️⃣ Shape & Bake:

 

Transfer the mixture into the prepared loaf pan and shape it evenly.

Spread extra marinara sauce over the top.

Bake for 40-45 minutes, or until the internal temperature reaches 165°F (75°C).

4️⃣ Rest & Serve:

 

Let the meatloaf rest for 5 minutes before slicing.

Serve with extra marinara sauce and a sprinkle of Parmesan, if desired.

Pair with garlic mashed potatoes, a side salad, or roasted vegetables for a complete meal!
