Fried Chicken with Gravy
Ingredients
4 chicken drumsticks or thighs
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
Vegetable oil for frying
Gravy
2 tbsp butter
2 tbsp all-purpose flour
2 cups chicken broth
1/2 tsp black pepper
Salt to taste
Instructions
Place the chicken in a bowl and pour the buttermilk over it. Let it marinate for at least 30 minutes or up to a few hours for better flavor.
In another bowl mix flour, cornstarch, salt, pepper, garlic powder, paprika, and onion powder.
Remove chicken from buttermilk and coat each piece well in the flour mixture.
Heat about 2 inches of oil in a deep pan to 350°F (175°C). Fry the chicken for 12–15 minutes until golden brown, crispy, and fully cooked. Place on paper towels to drain excess oil.
For the gravy, melt butter in a small saucepan over medium heat. Stir in flour and cook for 1–2 minutes until lightly golden.
Slowly whisk in chicken broth and cook until the gravy thickens. Season with salt and black pepper.
Serve the crispy fried chicken with mashed potatoes, pour warm gravy on top, and add sweet corn on the side.
