Herb Crusted Steak Bites with Caramelized Onions

Ingredients:

1 1/2 pounds steak (sirloin, ribeye, or your choice), cut into bite-sized pieces
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
4 cloves garlic, minced
Salt and pepper to taste
2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon balsamic vinegar

Directions:

In a large bowl, combine the steak bites, olive oil, chopped rosemary, thyme, parsley, minced garlic, salt, and pepper. Toss to coat the steak evenly with the herbs and seasoning. Let it marinate for at least 30 minutes.

In a large skillet, melt the butter over medium-low heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes. Stir in the balsamic vinegar and cook for an additional 2-3 minutes. Remove the onions from the skillet and set aside.

In the same skillet over medium-high heat, add the marinated steak bites. Cook for 2-3 minutes on each side until they are browned and cooked to your desired level of doneness. Remove the steak bites from the skillet and let them rest for a few minutes.

Return the caramelized onions to the skillet and toss them with the steak bites. Heat through for 1-2 minutes. Serve hot, garnished with additional fresh herbs if desired.
