Apple Pancakes

Ingredient:

Apples: 2 large (peeled and finely diced).

Eggs: 2.

Yogurt: 1 cup.

Sugar: 2 tbsp (or sweetener of choice).

Flour: 1 cup (use oat/almond flour for a healthier version).

Baking Powder: 1 tsp.

Vanilla & Cinnamon: A pinch of each.

Garnish: Powdered sugar.

Instructions

Whisk: Combine eggs, sugar, and vanilla in a bowl. Stir in the yogurt.

Mix: Add flour, baking powder, and cinnamon. Stir until smooth.

Fold: Fold in the diced apples until well incorporated.

Fry: Scoop a tablespoon of batter onto a lightly greased non-stick skillet.

Flip: Cook on medium heat for 2-3 minutes per side until golden brown.

Serve: Dust with powdered sugar and enjoy!
