If you think cabbage is boring, you haven’t had it “Southern Fried.” This isn’t your average steamed vegetable; this is cabbage transformed into a savory, smoky, melt-in-your-mouth masterpiece using the most important ingredient in a Southern kitchen: bacon fat. 😋✨

 

It’s the perfect companion to pork chops, cornbread, or a big pot of pinto beans. Plus, it’s one of the easiest one-pan dishes you’ll ever make!

 

🛒 INGREDIENTS

The Green: 1 medium head of Green Cabbage (chopped into 1-inch pieces, core removed)

 

The “Flavor Maker”: 4–6 slices of thick-cut Bacon (chopped)

 

The Aromatics:

 

1 medium Yellow Onion, sliced or diced

 

1 Bell Pepper (red or green), diced (optional, for color and sweetness)

 

2 cloves Garlic, minced

 

The Seasoning:

 

1 tsp Salt & 1 tsp Coarse Black Pepper

 

1 tsp Smoked Paprika (for that “pit-smoked” depth)

 

1/2 tsp Sugar (to balance the savory notes)

 

A pinch of Red Pepper Flakes (for a tiny bit of “Southern heat” 🌶️)

 

👩‍🍳 INSTRUCTIONS

1️⃣ The Bacon: In a large, deep skillet (cast iron is best!), fry the chopped bacon over medium heat until it’s perfectly crispy. Use a slotted spoon to remove the bacon bits and drain them on a paper towel, but leave that liquid gold (the grease) in the pan! 🥓🔥

2️⃣ The Sauté: Add the onions and bell peppers to the bacon grease. Sauté for 3–5 minutes until they are soft and translucent. Add the garlic and cook for just 30 seconds more so it doesn’t burn.

3️⃣ The Cabbage: Toss in the chopped cabbage. It will look like a mountain at first, but don’t worry—it will wilt down! Stir it well to coat every piece in the bacon fat. 🥄

4️⃣ The Seasoning: Sprinkle in your salt, pepper, paprika, sugar, and red pepper flakes.

5️⃣ The “Fry”: Cook uncovered over medium heat, stirring occasionally, for 15–20 minutes. You want the cabbage to be tender but with some slightly browned, caramelized edges.

6️⃣ The Finish: Stir those crispy bacon bits back in right before serving so they stay crunchy.

 

💡 PRO TIPS:

The Smoked Meat Swap: If you don’t have bacon, you can use diced smoked sausage or even a ham hock. If you use a ham hock, you’ll need to add a splash of water and cover the pan to help it tenderize. 🍖

 

Don’t Overcook: You want the cabbage to be tender-crisp, not mushy. If it starts to look too soft, take it off the heat!

 

The Vinegar Zing: A tiny splash of apple cider vinegar or a few shakes of Pepper Vinegar (the kind we talked about earlier!) right before serving brightens up the whole dish. 🧪🌶️
