Honey-Balsamic Glazed Lamb Chops with Buttery Mashed Potatoes

Ingredients:

4 lamb chops

1/4 cup honey

3 tablespoons balsamic vinegar

2 cloves garlic, minced

2 tablespoons olive oil

Salt and black pepper, to taste

4 large potatoes, peeled and cubed

1/4 cup butter

1/2 cup milk

Fresh parsley, chopped (optional, for garnish)

Directions:

Preheat your oven to 400°F (200°C).

In a small bowl, whisk together honey, balsamic vinegar, minced garlic, olive oil, salt, and black pepper.

Brush the lamb chops generously with the glaze mixture, coating all sides.

Heat a large oven-safe skillet over medium-high heat and sear the lamb chops for 2 minutes on each side.

Transfer the skillet to the oven and bake for 10-12 minutes, or until the lamb reaches your desired doneness. Remove and let rest for 5 minutes.

While the lamb cooks, bring a large pot of salted water to a boil and cook the potatoes until tender, about 15 minutes.

Drain the potatoes and mash them with butter and milk until smooth and creamy. Add salt to taste.

Serve the glazed lamb chops over the mashed potatoes, garnished with fresh parsley if desired.
