Old-Fashioned Fried Spam & Scalloped Potatoes
🛒 Ingredients
**For the Fried Spam:**
* 1 (12 oz) can Spam, sliced into ¼-inch slices
* 1–2 tbsp butter or oil
* Freshly ground black pepper (optional)
**For the Scalloped Potatoes:**
* 2 lbs russet or Yukon Gold potatoes, thinly sliced
* 1 small onion, thinly sliced
* 2 tbsp butter
* 2 tbsp all-purpose flour
* 2 cups whole milk (warm)
* 1 cup shredded cheddar cheese (optional but recommended)
* ½ tsp salt
* ½ tsp black pepper
* Pinch of paprika (optional)

Instructions
#### 1️⃣ Prepare the Scalloped Potatoes
1. Preheat oven to **350°F (175°C)**.
2. Lightly grease a 9×13 baking dish.
3. In a saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute (do not brown).
4. Gradually whisk in warm milk. Cook until thickened (3–5 minutes).
5. Stir in salt, pepper, and half the cheese (if using).
Layer half the potatoes in the baking dish, top with half the onions, and pour over half the sauce. Repeat layers.
Top with remaining cheese and sprinkle paprika if desired.
Cover with foil and bake **45 minutes**. Remove foil and bake another **20–30 minutes** until tender and golden. Let rest 10 minutes before serving.

#### 2️⃣ Fry the Spam
1. Heat butter or oil in a skillet over medium heat.
2. Add Spam slices in a single layer.
3. Cook 3–4 minutes per side until golden brown and crispy at edges.
4. Sprinkle with black pepper if desired.
