The Famous “Melt-in-Your-Mouth” Apple Cake
Ingredients
Apples: 4 large apples (approx. 500g), unpeeled and diced into small cubes.
Eggs: 3 large eggs (at room temperature).
Sugar: ¾ cup (150g).
Butter: ½ cup (100g) melted and cooled (or vegetable oil).
Milk: ½ cup (120ml).
Flour: 1 ½ cups (approx. 200g) all-purpose flour, sifted.
Baking Powder: 1 tbsp (16g).
Vanilla: 1 tsp vanilla extract.
Salt: A pinch of salt.
Topping: Powdered sugar for dusting.
Preparation Steps
Prep the Apples: Wash and dice the apples. Keeping the skin on adds texture and a lovely rustic look, as seen in your photo.
Cream the Eggs & Sugar: In a large bowl, whisk the eggs, sugar, and vanilla until the mixture is pale, thick, and fluffy.
Add Liquids: Gently whisk in the melted butter (or oil) and the milk until well combined.
Incorporate Dry Ingredients: Gradually fold in the sifted flour, baking powder, and salt. Stir until just combined—do not overmix, or the cake will be tough.
Fold in the Fruit: Add the diced apples to the batter. Fold them in carefully until every piece of apple is coated in a thin layer of cake mix.
Bake: * Pour the mixture into a greased springform pan (approx. 9 inches/22-24cm).
Bake in a preheated oven at 180°C (350°F) for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
Finish: Let the cake cool completely in the pan. Dust generously with powdered sugar before slicing.
Pro Tip: For an extra layer of flavor, you can add 1 teaspoon of cinnamon to the flour mixture. It pairs perfectly with the apples!
