Grilled Cheese & Tomato Soup.
1. Tomato Soup
Ingredients:
4 ripe tomatoes (or a can of peeled tomatoes).
1 tbsp tomato paste.
1 small onion (chopped) and 2 cloves of garlic.
1 cup chicken or vegetable broth (or water).
1/2 cup heavy cream (optional for a creamy texture).
Salt, black pepper, and dried basil.
Instructions:
In a pot, sauté the onion and garlic with a little oil or butter until soft.
Add the tomatoes, tomato paste, and broth. Let it simmer for 15 minutes.
Use a blender or immersion blender to puree the soup until smooth.
Return to heat, stir in the cream and spices, let it simmer for 2 minutes, and serve.
2. Grilled Cheese Sandwich
Ingredients:
2 slices of bread (white or sourdough work best).
A generous amount of cheese (Cheddar, Mozzarella, or Swiss).
Butter (at room temperature).
Instructions:
Spread butter on the outside of both bread slices (this ensures a golden, crispy crust).
Place one slice (buttered side down) in a non-stick skillet over medium heat.
Add the cheese on top of the bread, then cover with the second slice (buttered side up).
Flip the sandwich once the bottom is golden brown and the cheese starts to melt.
Press down slightly with a spatula until both sides are crispy and the cheese is fully melted.
Serving Tip:
Cut the sandwich diagonally into triangles or strips (as shown in your photo) and dip them directly into the hot soup for the best experience!
