School Baked Syrup Sponge Pudding ๐๐ฅโจ

Ingredients ๐:
ยท 200g unsalted butter, softened ๐ง
ยท 200g caster sugar ๐
ยท 4 large eggs ๐ฅ๐ฅ๐ฅ๐ฅ
ยท 200g self-raising flour ๐พ
ยท 1 tsp baking powder
ยท 2 tbsp golden syrup (plus 4 extra tbsp for the base!) ๐ฏ
ยท 2 tbsp milk ๐ฅ
ยท 1 tsp vanilla extract
For the custard ๐ฅฃ:
ยท 500ml whole milk ๐ฅ
ยท 2 tbsp custard powder
ยท 2 tbsp sugar
Method ๐ฉโ๐ณ๐จโ๐ณ:
1๏ธโฃ Preheat oven to 180ยฐC (160ยฐC fan). Grease a baking dish and spread 4 tbsp golden syrup all over the bottom ๐ฏ๐
2๏ธโฃ Cream butter and sugar until pale & fluffy. Beat in eggs one at a time ๐ฅโจ Then fold in flour, baking powder, vanilla, milk and 2 tbsp syrup ๐ฅ
3๏ธโฃ Spoon the batter over the syrup layer and gently level it out. Bake for 30-35 mins until golden and springy โฒ๏ธ๐ฐ
4๏ธโฃ Meanwhile, heat 450ml milk until hot ๐ฅ Mix custard powder, sugar and 50ml milk into a smooth paste, then whisk into hot milk until thick and dreamy ๐ฅฃ๐
