Breakfast Roll-Ups
A hearty and satisfying breakfast option that combines fluffy scrambled eggs, savory sausage, and melty cheese all wrapped up in a soft tortilla. Perfect for busy mornings or a weekend brunch!

Ingredients:
8 large eggs
1/4 cup whole milk
Salt and pepper to taste
8 breakfast sausage links (pork, turkey, or plant-based)
1 cup shredded sharp cheddar cheese
8 small flour tortillas

Directions:
Prepare the Egg Mixture: In a large bowl, whisk together the eggs, whole milk, salt, and pepper until well combined. Set aside.

Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage links according to package instructions until browned and cooked through. Remove from the skillet and let cool slightly before slicing into bite-sized pieces.

Scramble the Eggs: In the same skillet, pour in the egg mixture and cook over medium-low heat, stirring gently until the eggs are just set and fluffy. Remove from heat and stir in the cooked sausage and shredded cheddar cheese until the cheese is melted.

Assemble the Roll-Ups: Lay a tortilla flat on a clean surface. Spoon a generous portion of the egg and sausage mixture onto the center of the tortilla. Roll it up tightly, folding in the sides as you go to enclose the filling. Repeat with the remaining tortillas and filling.

Serve: Serve the roll-ups warm, and enjoy a delicious and filling breakfast on the go!
