Quick 10-Minute Skillet Apple Cake

Ingredients

The Apple Base:

Apples: 3 medium apples (peeled and sliced).

Butter: 1 tbsp.

Sugar: 1 tbsp (for caramelizing).

Cinnamon: ½ tsp (optional).

The Batter:

Egg: 1 large egg.

Sugar: 3 tbsp.

Vanilla Extract: 1 tsp.

Vegetable Oil: 30 ml (approx. ¼ cup).

Milk: 100 ml (approx. ½ cup).

All-Purpose Flour: 150g (approx. 1 ¼ cups).

Baking Powder: 8g (1 tbsp).

Salt: A pinch.

Instructions

Caramelize the Apples:

In a non-stick skillet, melt the butter. Add the apple slices, 1 tbsp of sugar, and cinnamon.

Sauté over medium heat for about 3 minutes until the apples soften slightly. Arrange them neatly to cover the bottom of the pan.

Prepare the Batter:

In a mixing bowl, whisk the egg, 3 tbsp of sugar, and vanilla until pale and frothy.

Stir in the oil and milk until well combined.

Gradually sift in the flour, baking powder, and salt. Whisk until the batter is smooth and free of lumps.

Cooking on the Stovetop:

Pour the batter evenly over the apples in the skillet. Use a spatula to smooth the top.

Cover the pan with a tight-fitting lid.

Cook over very low heat for 10–12 minutes. The top should feel firm to the touch.

The Flip:

Once the top is set, slide a spatula around the edges. Place a plate over the skillet and carefully flip the cake onto the plate.

Slide the cake back into the skillet (apple side up now) and cook for another 2 minutes to brown the bottom.

Serving:

Dust with powdered sugar or a glaze of apricot jam while still warm.
