Parmesan Crusted Sunbeam Chicken

Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup grated Parmesan cheese
– 1 cup breadcrumbs (preferably Italian seasoned)
– 2 large eggs
– 1 tablespoon Dijon mustard
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon dried oregano
– Salt and pepper to taste
– 2 tablespoons olive oil
– Fresh parsley, chopped (for garnish)

Instructions:
1. Preheat your oven to 400°F (200°C). Get that oven nice and hot, folks!
2. In a shallow bowl, whisk together the eggs and Dijon mustard until well combined. This is gonna be your egg wash, so make it nice and smooth.
3. In another bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and pepper. This is your crunchy coating, and it’s gonna be delicious!
4. Take each chicken breast and dip it first into the egg wash, making sure it’s fully coated. Let any excess drip off.
5. Then, roll that chicken in the Parmesan breadcrumb mixture, pressing down a bit to make sure it sticks. You want a good, thick coating on there!
6. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once it’s nice and hot, add the chicken breasts. Sear them for about 3-4 minutes on each side until they’re golden brown. This step adds a ton of flavor!
7. Once all the chicken is seared, transfer the skillet to the preheated oven. Bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
8. Once done, take it out of the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
