#### Ingredients:

 

**For the Dough:**

– 1 cup almond flour

– 2 eggs

– 1/2 teaspoon baking powder

– A pinch of salt

 

**For the Filling:**

– 1 cup blueberries (fresh or frozen)

– 1 cup cream cheese (like mascarpone or cream cheese)

– 1 teaspoon vanilla extract (optional)

– Sweetener (like stevia or erythritol) to taste

 

#### Instructions:

 

1. **Prepare the Dough:**

– In a bowl, mix almond flour, eggs, baking powder, and a pinch of salt until you have a smooth dough.

 

2. **Cook the Dough:**

– Heat a non-stick skillet over medium heat.

– Add a spoonful of the dough to the skillet and spread it into a thin circle.

– Cook for 2-3 minutes until bubbles form, then flip and cook for another minute.

– Remove the dough and repeat the process until all the dough is used.

 

3. **Prepare the Filling:**

– In a bowl, mix cream cheese with vanilla extract and sweetener.

– Gently fold in the blueberries.

 

4. **Assemble the Quesadilla:**

– Place one dough round in the skillet, then add some filling on top.

– Place another dough round on top of the filling and press gently.

 

5. **Cook the Quesadilla:**

– Cook for 2-3 minutes or until golden brown on both sides.

– Remove from skillet and cut into wedges like a pizza.

 

6. **Serve:**

– Serve warm and keep extra blueberries for garnish if desired.
