Homemade Samoas Bars

These Samoas Bars are melt-in-your mouth, magically delicious!
Ingredients:
For the Cookie Base:
1/2 cup sugar
3/4 cup butter, softened
1 large egg
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
For the Topping:
3 cups shredded coconut, toasted
12 oz chewy caramels
1/4 teaspoon salt
3 tablespoons milk
8 oz semisweet chocolate
Directions:
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
In a large bowl, cream together sugar and butter until smooth. Beat in the egg and vanilla. Gradually blend in the flour and salt. Press the dough evenly into the prepared pan.
Bake for 20-25 minutes until the base is set and edges are lightly golden. Cool completely in the pan on a wire rack.
For the topping, spread the coconut on a baking sheet and toast in the oven for 18-20 minutes, stirring occasionally, until golden. Cool slightly.
Melt the caramels, salt, and milk in a microwave-safe bowl, stirring frequently until smooth. Stir in the toasted coconut. Spread the mixture over the cooled cookie base.
Melt the chocolate in a separate bowl. Drizzle over the coconut-caramel layer or dip the bottom of the bars into the chocolate. Let the chocolate set before cutting into bars.
