Herbed Feta Spinach Puffs

Crispy golden pastry filled with savory feta, spinach, and herbs — easy to make, perfect to share.
Ingredients
For the Filling
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
3 cups fresh spinach, chopped
½ tsp salt
¼ tsp ground black pepper
½ tsp dried oregano
½ tsp dried thyme or dill
½ cup crumbled feta cheese
1 egg, lightly beaten (for binding)
For the Pastry
1 sheet puff pastry, thawed
1 egg yolk + 1 tbsp milk (for egg wash)
Instructions
Prepare the Filling
Heat olive oil in a pan over medium heat. Sauté the onion until translucent, then add garlic and cook briefly.
Add chopped spinach and cook until just wilted. Season with salt, pepper, oregano, and thyme. Let it cool.
Stir in crumbled feta and one beaten egg. Mix well to form a cohesive filling.
Assemble the Puffs
Preheat the oven to 200°C (390°F). Line a baking sheet with parchment paper.
Roll out the puff pastry slightly and cut into 6 or 8 equal squares.
Spoon a small amount of filling onto one side of each square. Fold over to form a triangle or rectangle, pressing edges to seal.
Brush the tops with egg wash.
Bake Until Golden
Bake for 18–22 minutes or until the pastry is puffed and golden brown.
Cool slightly before serving. Best enjoyed warm.
