Homemade Chocolate Chip Cheesecake Cookies recipe

Ingredients:

Cream Cheese Filling:

– 4 ounces cream cheese, softened

– 2 tablespoons granulated sugar

– ½ teaspoon vanilla extract

Chocolate Chip Cookie Dough:

– 1½ cups all-purpose flour

– ½ teaspoon baking soda

– ¼ teaspoon salt

– ½ cup unsalted butter, softened

– ½ cup packed light brown sugar

– ¼ cup granulated sugar

– 1 large egg, room temperature

– 1 teaspoon vanilla extract

– 1 cup semi-sweet chocolate chips

Directions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a small bowl, beat the softened cream cheese, granulated sugar, and ½ teaspoon vanilla extract until smooth and creamy. Set aside.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, using an electric mixer, cream the butter, light brown sugar, and granulated sugar until light and fluffy.

Add the egg and 1 teaspoon vanilla extract to the butter mixture and beat until combined.

Gradually add the flour mixture to the wet ingredients, mixing until just combined.

Stir in the chocolate chips.

Scoop about 1 tablespoon of cookie dough and flatten it slightly in your palm. Place a small dollop (about 1 teaspoon) of the cream cheese filling in the center.

Cover the cream cheese filling with another tablespoon of cookie dough and gently seal the edges to form a ball.

Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Bake for 12-15 minutes, or until the edges are lightly golden but the center still looks soft.

Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completelly
