Beef Macaroni Soup

Ingredients:

 

1 lb ground beef

 

1 medium onion, chopped

 

2 garlic cloves, minced

 

1 can (14 oz) diced tomatoes

 

4 cups beef broth

 

1 1/2 cups elbow macaroni

 

1 carrot, diced

 

1 celery stalk, chopped

 

1 tsp dried oregano

 

Salt and pepper to taste

 

Fresh parsley for garnish (optional)

 

Preparation:

 

In a large pot, cook ground beef over medium heat until browned. Drain excess fat.

 

Add chopped onion and garlic, cooking until softened, about 3 minutes.

 

Stir in diced tomatoes, beef broth, carrot, celery, oregano, salt, and pepper. Bring to a boil.

 

Add macaroni, reduce heat, and simmer for 10-12 minutes, or until pasta is tender.

 

Taste and adjust seasoning as needed.

 

Serve hot, garnished with fresh parsley if desired. Enjoy your comforting beef macaroni soup!
