Greek Salad

Ingredients:
1 cucumber, sliced

2 tomatoes, chopped or sliced

1/2 red onion, thinly sliced

1/2 green bell pepper, sliced

1/2 cup kalamata or green olives

100g feta cheese, in blocks or crumbled

Dried oregano

Fresh parsley (optional)

Salt & black pepper

Dressing:
3 tbsp extra virgin olive oil

1 tbsp red wine vinegar or lemon juice

(Optional) 1 small garlic clove, minced

Instructions:
Prep the Veggies:
Slice cucumber, tomatoes, onion, and bell pepper. Place in a large bowl.

Add Olives & Feta:
Scatter olives over the veggies and top with feta cheese slices or crumbles.

Make the Dressing:
Whisk olive oil, vinegar/lemon juice, garlic, salt, and pepper in a small bowl.

Assemble:
Drizzle the dressing over the salad. Sprinkle oregano and parsley on top. Mix gently or leave feta whole on top for that Greek-style look.

Serve fresh & enjoy!
