Gourmet Lobster Tails and Scallops with Lemon Orzo

This dish combines lobster tails, seared scallops, and lemon orzo for an elegant meal.

Ingredients

Garlic Butter
– 2 heads garlic
– 1/2 cup softened butter.

– 1 onion
– 3 tbsp olive oil.

– 1/2 tsp salt
– Fresh parsley.

Seafood and Orzo
– 2 lobster tails (20 oz total).

– 8 large scallops
– 1 cup orzo.

– 1 cup seafood stock
– 1/2 cup white wine.

– 4 tbsp grated Parmesan cheese
– 4 tbsp lemon juice.

– Salt and pepper
– Lemon wedges.

Instructions

1. Roast garlic and onion at 400°F for 40-50 minutes. Squeeze garlic cloves into softened butter. Mix with salt to make garlic butter.

2. Prepare lobster tails by cutting through the top shell. Lift meat onto shell. Brush with garlic butter. Bake at 400°F for 12-15 minutes.

3. Pat scallops dry. Season with salt and pepper. Sear in garlic butter for 1-2 minutes per side. Remove from pan.

4. Deglaze pan with white wine. Add orzo and seafood stock. Simmer for 9 minutes until orzo is tender.

5. Stir Parmesan cheese and lemon juice into orzo. Season with salt and pepper.

6. Serve orzo topped with scallops and lobster tail. Garnish with parsley and lemon wedges.

For optimal storage, allow any leftovers of the lobster, scallops, and orzo to cool completely to room temperature before transferring them to an airtight container.

Refrigerate for up to two days.

While the seafood is best enjoyed fresh, gently reheating in an oven at 325°F is recommended to help preserve the texture of the scallops and prevent the lobster from becoming rubbery; cover with foil to retain moisture.

The orzo may absorb more liquid upon standing; a small splash of stock or water when reheating can help restore its creaminess.

Although possible, freezing is not advised for this dish, as the delicate seafood and creamy orzo can suffer significant textural changes and become watery upon thawing.

When serving, presentation is key to the elegant experience. Spoon a generous bed of the warm lemon orzo onto the center of each plate.

Carefully place the seared scallops and lobster tail atop the orzo.

Drizzle any remaining warm garlic butter sauce over the seafood to enhance its richness and add a glossy finish.

Immediately garnish with a sprinkling of freshly chopped parsley for a touch of color and freshness, and add a lemon wedge on the side for guests to squeeze over their dish according to their taste.

This meal is rich and complete on its own, but it can be beautifully accompanied by simple, light sides such as steamed asparagus, haricots verts, or a crisp arugula salad with a light vinaigrette to cut through the richness.

Serve immediately to ensure everything is enjoyed at its ideal temperature and texture.
