(GCR) galangal fried chicken

ingredients:

1kg chicken

3 cloves of garlic

4 cloves of Red Onion

1 tbsp coriander

5 candlenuts

2 cm turmeric

1/2 piece of ginger

4 bay leaves

2 lemongrass stalks

2 galangal segments (grated & set aside)

100 ml water

salt and stock powder

 

How to make

1. Puree the spices: red garlic, coriander, candlenuts, turmeric, ginger

 

2. Saute the ground spices together with grated galangal, bay leaves, lemongrass until fragrant. Add salt, stock powder & a little water.

 

3. Cook until the chicken is tender & the spices are absorbed, the water dries up and stir occasionally

 

4. Fry all the chicken in hot oil over medium heat.

 

5.Fry the remaining ungkepan spices until dry and brown. Drain to sprinkle on fried chicken.

 

6. Serve with shrimp paste chili sauce
