1. Ingredients
The Base:
Zucchini: 3–4 large zucchinis, sliced lengthwise into halves or thick “steaks.”
Olive Oil: 2 tablespoons.
Garlic: 3 cloves, finely minced.
Toppings & Seasoning:
Herbs: Fresh basil (for garnish), dried oregano, or thyme.
Cheese: A blend of Mozzarella and Parmesan cheese.
Seasoning: Salt and black pepper to taste, and red chili flakes (optional).
2. Preparation Instructions
Step 1: Prepare the Zucchini
Wash the zucchini and trim the ends.
Slice them lengthwise to create “steaks” or “boats” as shown in the photo.
Pro Tip: You can score the surface of the zucchini with a knife to help it absorb the flavors better.
Step 2: Seasoning
In a small bowl, whisk together the olive oil, minced garlic, salt, pepper, and dried herbs.
Brush this mixture generously over the surface of each zucchini slice.
Step 3: Initial Roasting
Arrange the zucchini slices on a baking sheet lined with parchment paper.
Bake in a preheated oven at 200°C (400°F) for 10–15 minutes until the zucchini begins to soften.
Step 4: Add Cheese and Broil
Remove the tray from the oven and top each slice with a generous layer of cheese.
Return to the oven (or place under the broiler) for 3–5 minutes until the cheese is melted, bubbly, and golden brown.
Garnish with fresh basil or cracked black pepper before serving.
