Cheddar Biscuits (Low-Carb, Fluffy)

 

Makes: 9–10 biscuits

Net carbs: ~2–3g per biscuit

 

🧾 Ingredients

Dry:

 

2 cups almond flour

 

1 tbsp baking powder

 

½ tsp salt

 

½ tsp garlic powder (optional)

 

Wet:

 

2 large eggs

 

⅓ cup melted butter

 

¼ cup sour cream

 

½ cup shredded cheddar (mixed into dough)

 

Topping:

 

½ cup shredded cheddar

 

1 tbsp melted butter

 

Pinch garlic powder + parsley (optional)

 

👩‍🍳 Instructions

1️⃣ Preheat

 

Preheat oven to 375°F (190°C).

Line a baking sheet with parchment.

 

2️⃣ Mix Dry

 

In a bowl combine:

 

Almond flour

 

Baking powder

 

Salt

 

Garlic powder

 

3️⃣ Mix Wet

 

In another bowl whisk:

 

Eggs

 

Melted butter

 

Sour cream

 

4️⃣ Combine

 

Stir wet into dry until thick dough forms.

Fold in ½ cup shredded cheddar.

 

The dough will be slightly sticky but scoopable.

 

5️⃣ Shape

 

Scoop into 9 mounds on baking sheet (rustic drop-biscuit style like in the image).

 

6️⃣ Add Cheese Topping

 

Sprinkle remaining cheddar on top of each biscuit.

 

7️⃣ Bake

 

Bake 18–22 minutes until golden brown on top and edges.

 

8️⃣ Optional Garlic Butter Finish

 

Brush warm biscuits with:

 

Melted butter

 

Garlic powder

 

Parsley
