Ingredients

Eggs: 4-5 hard-boiled eggs, finely grated.

Cheese: 1 cup of sharp Cheddar cheese (or any firm cheese you prefer), finely grated.

Vegetables: Finely chopped green onions (chives) and a small amount of finely grated carrot for color and texture.

Binder: 3-4 tablespoons of Mayonnaise (you can substitute half with Greek yogurt or sour cream for a lighter version).

Flavorings:

1 teaspoon Dijon mustard.

1 clove of minced garlic (optional).

Salt and black pepper to taste.

A pinch of paprika or onion powder.

Instructions

Prep: Grate the hard-boiled eggs, cheese, and carrot using the fine side of a grater to ensure a smooth, spreadable consistency.

The Sauce: In a medium bowl, whisk together the mayonnaise, mustard, garlic, and spices until well combined.

Combine: Fold in the grated eggs, cheese, carrot, and chopped green onions into the mayonnaise mixture.

Mix: Stir gently until all ingredients are evenly coated and the mixture reaches a creamy paste-like texture.

Chill: For the best flavor, let it sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
