Cranberry Feta Pinwheels with Cream Cheese

 

Ingredients:

 

8 oz cream cheese, softened

1 cup dried cranberries, chopped

1 cup crumbled feta cheese

¼ cup green onions, finely chopped

4 large flour tortillas (10-inch)

Salt and pepper, to taste

Fresh parsley, chopped (optional, for garnish)

Directions:

 

1. Prepare the Filling:

 

In a medium mixing bowl, combine the softened cream cheese, chopped cranberries, crumbled feta, and green onions.

Mix well until creamy and evenly combined.

Season the filling with salt and pepper to taste.

2. Assemble the Pinwheels:

 

Spread about 1/4 of the cream cheese mixture evenly over one tortilla, ensuring it reaches all the edges for a uniform roll.

Tightly roll the tortilla into a log.

Repeat with the remaining tortillas and filling.

3. Chill:

 

Wrap each rolled tortilla securely in plastic wrap to maintain its shape.

Refrigerate for at least 1 hour to firm up, making slicing easier.

4. Slice and Serve:

 

Unwrap the chilled tortillas and slice each into 1-inch pinwheels.

Arrange the pinwheels on a serving platter and garnish with fresh parsley, if desired.

Tips:

 

For an extra layer of flavor, drizzle honey or balsamic glaze over the filling before rolling.

Use spinach or tomato-flavored tortillas for added color and taste.
