Chicken & Shrimp Stuffed Shells
Prep & Cook the Protein: Season your chicken and shrimp with oil and spices. Bake the chicken at 425°F for 40 minutes, then chop it up. Sauté the shrimp, then chop it as well.
Prep the Veggies: Dice onions and chop some baby spinach.
Make the Sauce: In the same pan, sauté onions and sun-dried tomatoes, then stir in tomato paste. Add a bit of chicken stock and heavy cream, seasoning as you go. Once it simmers, slowly mix in shredded cheese. When the sauce is smooth, add the chopped spinach.
Cook the Pasta: Boil jumbo shells according to the package instructions.
Make the Filling: In a bowl, mix the chopped chicken, shrimp, cream cheese, a little sauce, and shredded cheese.
Assemble & Bake: Spread some sauce on the bottom of a baking dish, then stuff the shells with the filling and arrange them in the dish. Top with more sauce and shredded cheese. Bake at 350°F for 15 minutes.
