Chocolate Pecan Turtle Clusters
Ingredients
2 1/2 cups Pecan halves (toasted for better flavor).
1/2 cup Salted butter.
1/2 cup Light corn syrup (this makes the caramel stretchy).
1 cup Brown sugar (packed).
1/2 can Sweetened condensed milk (approx. 7 oz / 200g).
2 cups Semi-sweet or milk chocolate chips.
Instructions
1. Prep the Pecans
Line a baking sheet with parchment paper. Arrange the pecans in small clusters of 3 to 4 halves each. Set aside.
2. Make the “Crack” Caramel
In a heavy-bottomed saucepan over medium heat, melt the butter, brown sugar, and corn syrup.
Once the mixture starts to bubble, slowly stir in the sweetened condensed milk.
Stir constantly for about 5–8 minutes until it reaches the “soft ball stage” (if you drop a bit into cold water, it forms a soft, squishy ball).
Remove from heat.
3. Assemble the Clusters
Carefully spoon a tablespoon of the warm caramel over each pecan cluster.
Let them sit for about 30 minutes until the caramel is firm and set.
4. The Chocolate Topping
Melt the chocolate chips in the microwave (in 30-second intervals) or using a double boiler.
Spoon a dollop of chocolate over the cooled caramel layer. You can use the back of the spoon to smooth it out.
