Chicken Fried Steak
Ingredients
4 cube steaks (beef round, tenderized)
1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon garlic powder
2 large eggs
½ cup milk
Vegetable oil, for frying
For the Brown Gravy
3 tablespoons oil or pan drippings
3 tablespoons all-purpose flour
2 cups beef broth
Salt and black pepper to taste
For Serving
Mashed potatoes
Buttered corn
Instructions
Pat the cube steaks dry with paper towels. In a shallow bowl, mix flour, salt, pepper, paprika, and garlic powder. In another bowl, whisk together eggs and milk.
Dredge each steak in the seasoned flour, dip into the egg mixture, then coat again in flour, pressing firmly so the crust adheres well.
Heat about ½ inch of vegetable oil in a large skillet over medium heat. Fry the steaks for 3–4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
For the gravy, remove excess oil from the skillet, leaving about 3 tablespoons. Stir in flour and cook for 1–2 minutes until lightly browned. Gradually whisk in beef broth, stirring constantly until thick and smooth. Season with salt and pepper.
Spoon the warm brown gravy generously over the crispy chicken fried steak. Serve with creamy mashed potatoes and buttered corn.
