### Ingredients:

– 500 grams of green or black olives

– 1 cup of water

– 1/2 cup of vinegar (white or apple cider)

– 2-3 cloves of garlic, crushed

– 1 tablespoon of salt

– 1 teaspoon of dried thyme (optional)

– 1 teaspoon of red pepper flakes (optional)

– Olive oil (for serving)

 

### Instructions:

1. **Prepare the Olives**: If the olives are bitter, soak them in water for 24 hours to reduce the bitterness, changing the water several times.

2. **Season the Olives**: In a bowl, mix the water, vinegar, garlic, salt, thyme, and red pepper flakes.

3. **Add the Olives**: Place the olives in a glass jar and pour the seasoning mixture over them.

4. **Cover the Olives**: Ensure that the olives are completely submerged in the marinade and add olive oil on top.

5. **Storage**: Close the jar tightly and place it in the refrigerator. It’s best to leave it for two weeks to develop the flavors.

 

### Serving:

The olives can be eaten directly from the jar as an appetizer or added to salads and your favorite dishes.
