**Cheese and Vegetable Muffins*

 

 

### Ingredients

 

– **2 cups** all-purpose flour

– **1 tablespoon** baking powder

– **1/2 teaspoon** salt

– **1 cup** milk

– **3 large** eggs

– **1/2 cup** vegetable oil or melted butter

– **1 cup** shredded cheese (cheddar or your choice)

– **1 cup** diced bell peppers (red or green)

– **1/4 cup** chopped fresh herbs (like parsley or chives)

– **1/2 cup** cooked ham or diced meat (optional)

 

### Instructions

1. Preheat the oven to 375°F (190°C).

2. In a bowl, whisk together flour, baking powder, and salt.

3. In another bowl, mix milk, eggs, and oil.

4. Combine the wet ingredients with dry ingredients, then fold in cheese, bell peppers, herbs, and meat if using.

5. Pour the batter into muffin tins and bake for 20-25 minutes, or until golden.
