Cheesy Beef & Egg Breakfast Burrito

Ingredients:

For the Filling:

1 lb (450g) ground beef

1 tbsp olive oil

1/2 small onion, finely chopped

1/2 tsp ground cumin

1/2 tsp chili powder

Salt and freshly ground black pepper, to taste

4 large eggs, beaten

1/2 cup shredded cheddar cheese

1/4 cup salsa (mild or spicy, depending on preference)

1 tbsp fresh cilantro, chopped (optional)

For the Burrito:

4 large flour tortillas (soft, but able to be toasted)

1 tbsp butter (for toasting)

Additional salsa (optional, for serving)

Instructions:

Prepare the Ground Beef:

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook for 2-3 minutes until softened.

Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Season with ground cumin, chili powder, salt, and pepper. Cook until browned and cooked through, about 6-7 minutes.

Once done, stir in 1/4 cup of salsa, and let the mixture simmer for a couple of minutes to let the flavors meld. Set aside.

Scramble the Eggs:

In another skillet, melt the butter over medium heat. Add the beaten eggs and cook, stirring gently, until scrambled and fully cooked. Season with salt and pepper to taste. Once done, remove from heat.

Assemble the Burritos:

Lay the flour tortillas flat on a clean surface.

In the center of each tortilla, add a few spoonfuls of the seasoned ground beef mixture, scrambled eggs, and a generous sprinkle of shredded cheddar cheese. You can add a little more salsa if you want extra heat and flavor.

Fold the sides of the tortilla in and roll it tightly to enclose the filling.

Toast the Burritos:

Heat a large skillet over medium-high heat and melt a bit of butter.

Place the burritos seam-side down in the skillet. Toast them for 2-3 minutes per side, or until golden brown and crispy, pressing gently to ensure they stay sealed.

Serve:

Once toasted, cut the burrito in half to reveal the vibrant, gooey filling.

Serve with extra salsa on the side if desired, and garnish with chopped fresh cilantro for an added pop of color.
