Baked Potato Cheese Balls

Ingredients:

 

2 large potatoes, peeled and boiled

1 cup cheddar cheese, grated

1/4 cup parmesan cheese, grated

2 tbsp fresh chives, finely chopped

1 tsp garlic powder

Salt and pepper, to taste

1/2 cup all-purpose flour (for coating)

2 large eggs, beaten

1 cup breadcrumbs (for coating)

Cooking spray or olive oil (for greasing)

 

Instructions:

Preheat oven: Set to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray/olive oil.

Prepare potato mixture: Mash the boiled potatoes in a large bowl. Mix in cheddar, parmesan, chives, garlic powder, salt, and pepper until well combined.

Form cheese balls: Take a tablespoon of the potato mixture and roll into balls. Repeat until all the mixture is used.

Coat: Roll each ball in flour, then dip in beaten eggs, and coat with breadcrumbs.

Bake: Arrange the coated balls on the baking sheet. Spray or brush with cooking spray/olive oil. Bake for 20-25 minutes until golden brown and crispy.

Serve: Let cool for a few minutes, then enjoy with dipping sauces like sour cream, ranch, or marinara.
