Fire-Grilled Marinated Steak with Spicy Thai Chili Sauce

Ingredients:
For the Steak Marinade:
1.5 lbs flank steak (or your favorite cut)
1/4 cup soy sauce
2 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons lime juice
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon black pepper
1 tablespoon sesame oil
For the Spicy Thai Chili Sauce:
1/4 cup Thai chili sauce (like Sriracha or sweet chili sauce)
1 tablespoon lime juice
1 teaspoon fish sauce
1 teaspoon honey (optional, for sweetness)
Fresh cilantro, chopped (for garnish)
Instructions:
Marinate the Steak: In a bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, black pepper, and sesame oil. Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour (or up to overnight for maximum flavor).
Prepare the Grill: Preheat your grill to medium-high heat. Remove the steak from the marinade and let any excess drip off. Discard the marinade.
Grill the Steak: Place the steak on the grill and cook for about 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130°F for medium-rare).
Make the Spicy Thai Chili Sauce: In a small bowl, mix together Thai chili sauce, lime juice, fish sauce, and honey (if using). Adjust the spice level to your liking.
Rest and Slice the Steak: Once cooked, remove the steak from the grill and let it rest for 5-10 minutes. This allows the juices to redistribute. Slice the steak against the grain into thin strips.
Serve: Drizzle the spicy Thai chili sauce over the sliced steak and garnish with fresh cilantro. Serve with your favorite sides, like grilled vegetables or rice.
