Lemon Ginger Chicken with Pineapple Mango Salsa

Ingredients: (Serves 4)

*For the Chicken:
– 4 boneless, skinless chicken breasts
– 2 tbsp olive oil
– 2 tbsp lemon juice
– 1 tsp lemon zest
– 1 tbsp fresh ginger, grated
– 2 cloves garlic, minced
– 1 tsp honey
– ½ tsp salt
– ½ tsp black pepper

*For the Pineapple Mango Salsa:
– 1 cup fresh pineapple, diced
– 1 cup fresh mango, diced
– ½ small red onion, finely chopped
– 1 small jalapeño, finely chopped (optional)
– Juice of 1 lime
– 2 tbsp fresh cilantro, chopped
– Salt to taste

**Directions:
1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, zest, ginger, garlic, honey, salt, and pepper. Coat chicken and marinate for 20–30 minutes.
2. Cook the chicken:
– Heat a grill or pan over medium heat.
– Cook chicken for 5–7 minutes per side, or until fully cooked (165°F/75°C internal temp).
3. Make the salsa: In a bowl, combine pineapple, mango, red onion, jalapeño, lime juice, cilantro, and salt. Mix well.
4. Serve: Top the chicken with pineapple mango salsa and enjoy!

Approx. 400–450 kcal per serving.

A fresh, zesty, and slightly sweet dish!
