1 can (20 oz) crushed pineapple (drained, reserve 2 tbsp juice)

1 package (3.4 oz) instant vanilla pudding mix

1 cup cold milk

1 cup shredded coconut (sweetened or unsweetened)

1 cup whipped topping (like Cool Whip, thawed)

1/2 cup chopped macadamia nuts (or pecans, walnuts, or almonds)

Optional Toppings:

Toasted coconut flakes

Maraschino cherries

Fresh pineapple chunks

 

✅Step-by-Step Instructions

 

Step 1: Prepare the Pudding

In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened. Let it sit for 2-3 minutes to set.

 

Step 2: Add Pineapple and Coconut

Stir in the drained crushed pineapple and shredded coconut until well combined. Add the reserved pineapple juice to enhance the flavor.

 

Step 3: Fold in Whipped Topping

Gently fold in the whipped topping until the mixture is light and fluffy. Be careful not to overmix.

 

Step 4: Add the Crunch

Fold in the chopped macadamia nuts (or your preferred nuts) for a satisfying crunch.

 

Step 5: Chill and Set

Transfer the mixture to a serving dish or individual dessert cups. Cover and refrigerate for at least 1 hour to allow the flavors to meld and the dessert to set.
