Ingredients:

For Steak:

1 lb ribeye or sirloin steak
Salt and black pepper, to taste
1 tablespoon olive oil
For the Crispy Onions:

1 large onion, thinly sliced
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
Vegetable oil, for frying
For the Sandwich:

4 sandwich rolls or ciabatta buns
4 tablespoons mayonnaise
1 tablespoon Dijon mustard
Lettuce leaves
Tomato slices
Pickles (optional)

Directions:

Season the steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak for 4-5 minutes per side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing thinly against the grain.
Soak the thinly sliced onions in buttermilk for at least 10 minutes. In a separate bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Dredge the soaked onions in the flour mixture, ensuring they are well coated.
Heat vegetable oil in a deep frying pan over medium-high heat. Fry the onions in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels.
Toast the sandwich rolls or ciabatta buns. In a small bowl, mix mayonnaise and Dijon mustard.
Assemble the sandwiches: spread the mayonnaise mixture on the toasted rolls, layer with lettuce leaves, tomato slices, pickles (if using), sliced steak, and top with crispy onions. Serve immediately.
