Chicken fried steak
Ingredients
2 beef cube steaks
1 cup all-purpose flour
1 tsp salt
1 tsp black pepper
1 tsp paprika
½ tsp garlic powder
2 large eggs
½ cup milk
½ cup buttermilk
Oil for frying
For the Gravy
2 tbsp pan drippings or butter
2 tbsp all-purpose flour
2 cups milk
½ tsp salt
½ tsp black pepper
Instructions
In a shallow bowl mix flour, salt, pepper, paprika, and garlic powder. In another bowl whisk eggs, milk, and buttermilk together.
Dredge each cube steak in the flour mixture, dip into the egg mixture, then coat again in the flour mixture for a crispy crust.
Heat about 1 cm of oil in a skillet over medium-high heat. Fry steaks for 3–4 minutes per side until golden brown and crispy. Remove and keep warm.
For the gravy, remove most of the oil leaving about 2 tablespoons in the pan. Whisk in flour and cook for about 1 minute.
Slowly whisk in milk, stirring constantly until thick and smooth. Season with salt and black pepper.
Place the chicken fried steak on a plate with mashed potatoes and corn, then pour warm gravy generously over the steak and potatoes.
