1. Prep the Roast:

 

Take the prime rib out of the fridge 2–3 hours before cooking so it reaches room temperature.

 

Pat dry with paper towels.

 

2. Season:

 

In a small bowl, mix olive oil, salt, pepper, garlic powder, rosemary, thyme, and minced garlic.

 

Rub the mixture all over the roast.

 

3. Roast (High Heat):

 

Preheat oven to 475Β°F (245Β°C).

 

Place the roast fat side up on a rack in a roasting pan.

 

Roast for 20 minutes to create a crust.

 

4. Roast (Low Heat):

 

Lower the oven temperature to 325Β°F (165Β°C) and continue roasting:

β€’ Use a meat thermometer for accuracy.

 

5. Rest:

 

Remove from oven, tent with foil, and rest for 20–30 minutes before slicing.

6. Au Jus (Optional):

 

Pour pan drippings into a saucepan, add beef broth, and simmer for 5–10 minutes.

 

Skim off excess fat and serve with the meat.
