π§ Ingredients:
β’ 1 (5β7 lb) prime rib roast (bone-in or boneless)
β’ 2 tbsp olive oil
β’ 2 tbsp kosher salt
β’ 1 tbsp black pepper
β’ 1 tbsp garlic powder
β’ 1 tbsp fresh rosemary, finely chopped
β’ 1 tbsp fresh thyme, finely chopped
β’ 4 cloves garlic, minced
β’ Optional: 1 cup beef broth (for au jus)

π¨βπ³ Instructions:
1. Prep the Roast:
Take the prime rib out of the fridge 2β3 hours before cooking so it reaches room temperature.
Pat dry with paper towels.
2. Season:
In a small bowl, mix olive oil, salt, pepper, garlic powder, rosemary, thyme, and minced garlic.
Rub the mixture all over the roast.
3. Roast (High Heat):
Preheat oven to 475Β°F (245Β°C).
Place the roast fat side up on a rack in a roasting pan.
Roast for 20 minutes to create a crust.
4. Roast (Low Heat):
Lower the oven temperature to 325Β°F (165Β°C) and continue roasting:
β’ About 15 minutes per pound for medium-rare (internal temp 130Β°F / 54Β°C).
β’ Use a meat thermometer for accuracy.
5. Rest:
Remove from oven, tent with foil, and rest for 20β30 minutes before slicing.
(The temperature will rise about 5Β°F while resting.)
6. Au Jus (Optional):
Pour pan drippings into a saucepan, add beef broth, and simmer for 5β10 minutes.
Skim off excess fat and serve with the meat.
