Chocolate-Covered Peanut Butter Crackers
This classic “no-bake” treat is beloved for its perfect mix of salty, sweet, and crunchy textures.
Ingredients
The Base: One box of Ritz Crackers (or any similar round salty crackers).
The Filling: Creamy Peanut Butter.
The Coating: 400g of Melting Chocolate or Milk Chocolate bars.
The Secret for Gloss: 1 tablespoon of Coconut Oil or Vegetable Shortening (this helps make the chocolate smooth and shiny).
Optional Flavor: A few drops of vanilla or peppermint extract.
Preparation Method
Make the “Sandwiches”: Spread a small teaspoon of peanut butter on one cracker and top it with another cracker to create a mini sandwich. Repeat until you have the desired amount.
Flash Chill: Place the sandwiches in the refrigerator for 15–30 minutes. This ensures the crackers don’t slide apart while dipping.
Melt the Chocolate: Melt the chocolate with the oil/shortening using a double boiler or in the microwave (in 30-second intervals, stirring in between).
The Dip: Using a fork, dip each sandwich into the melted chocolate until fully coated. Lift it out and tap gently to remove the excess chocolate.
Setting: Place the crackers on wax paper or parchment paper. Let them sit at room temperature or in the fridge for 30–60 minutes until the coating is completely firm.
