Hawaiian Glazed BBQ Ribs
This recipe is a staple in Hawaiian cuisine, known for its perfect balance of sweet, savory, and “fall-off-the-bone” tenderness.
Ingredients
Meat: 2-3 lbs of Beef or Pork ribs (Short ribs or Back ribs).
The Secret Marinade: 1 cup Pineapple juice (this is the key to tenderizing the meat).
The Glaze Sauce:
1/2 cup Soy sauce.
1/2 cup Brown sugar (for that rich caramel color).
2 tbsp Ketchup or BBQ sauce.
3 cloves Garlic, minced.
1 tbsp Fresh ginger, grated.
1 tsp Sesame oil.
Preparation Method
Seasoning: Season the ribs generously with salt, black pepper, and garlic powder.
Tenderizing: Place the ribs in a deep baking tray. Pour the pineapple juice over them. Cover the tray tightly with aluminum foil.
Slow Roasting: Bake in a preheated oven at 300°F (150°C) for about 2.5 to 3 hours. The low temperature ensures the meat becomes incredibly tender.
Making the Glaze: While the ribs are roasting, combine the soy sauce, brown sugar, ginger, garlic, and ketchup in a small saucepan. Simmer over medium heat until the sauce thickens into a honey-like consistency.
- The Final Char: Remove the ribs from the oven and brush them generously with the prepared glaze. Place them back under the broiler (top grill) for 5–10 minutes until the sugar caramelizes and gets that beautiful dark, glossy finish shown in your photo.
