πΏπ§ Healthy Cauliflower Pancakes with Cheese πΏπ§
Ingredients (6β8 pancakes)
2 cups of cauliflower cooked and crushed
2 eggs
1β2 cup grated low-fat cheese (can be light mozzarella or light manchego)
1β4 cup ground oats
2 tablespoons of fresh parsley
1 clove grated garlic (optional)
Salt and pepper to taste
1 tsp olive oil (only if cooked in a pan)
Preparation:
1. Prepare the cauliflower
Steam the cauliflower until tender (about 10 minutes).
Let cool slightly and mash very fine or pass through the food processor (without becoming mash).
Place on a clean cloth and squeeze out excess water to keep the pancakes a good consistency.
2. Mix up the ingredients
In a bowl, mix cauliflower, eggs, grated cheese, ground oats, parsley, garlic, salt and pepper.
Slightly knead until integrated. Mixture must be moldable.
3. Form the pancakes
Take portions with your hands and shape flat pancakes the same size.
4. Cook
Pan option (faster):
prepare a nonstick pan with a little olive oil and cook the pancakes on both sides until they are golden brown.
Oven option (lighter):
Preheat the oven to 190 Β°C (375 Β°F).
Place the pancakes in a tray with buttered or lightly oiled paper.
Bake for 20 to 25 minutes, flipping halfway through so they are even golden.
