Stuffed Bell Peppers
Ingredients (Serves 4 – 4 stuffed peppers)
4 large green bell peppers
1 lb ground beef (80/20 works best)
1 cup cauliflower rice (fresh or frozen, thawed & drained)
1/2 small onion, finely diced
2 cloves garlic, minced
1/2 cup low-carb marinara sauce (no added sugar)
1 tsp Italian seasoning
1/2 tsp paprika
Salt & pepper to taste
1 1/2 cups shredded cheddar or Mexican blend cheese
2 tbsp olive oil
Optional:
Red pepper flakes
Fresh parsley for garnish
Instructions
1️⃣ Prep Peppers
Preheat oven to 375°F (190°C).
Cut tops off peppers and remove seeds.
Lightly brush outside with olive oil.
Place in baking dish and pre-bake for 10 minutes to soften slightly.
2️⃣ Make Filling
In a skillet, heat olive oil over medium.
Cook onion and garlic until fragrant.
Add ground beef; cook until browned. Drain excess grease if needed.
Stir in cauliflower rice, marinara, seasonings, salt, and pepper.
Cook 3–5 minutes until cauliflower is tender.
3️⃣ Stuff & Bake
Spoon mixture into peppers.
Top generously with shredded cheese.
Bake 20–25 minutes until peppers are tender and cheese is bubbly.
Broil 2–3 minutes for a golden top (optional).
